Spicy Bacon Jam Brussels Sprouts with Pepper Jelly

SPICY BACON JAM BRUSSELS SPROUTS

YOU WILL NEED:
• 2 lbs Brussels sprouts, halved
• 3 Tbsp extra virgin olive oil
• Salt & pepper, to taste
• 4–5 slices bacon, cooked and chopped
• ½ cup Jenkins Jellies Pepper Jelly
• ¼ cup brown sugar
• 1½ Tbsp lemon juice
• 2 cloves garlic, minced

WHAT TO DO:
OVEN: Preheat oven to 400°F and line a baking sheet with foil. In a large bowl, toss Brussels sprouts with olive oil, salt, and pepper. Arrange cut-side down on the baking sheet and roast for 25 minutes.

SAUCE: While sprouts roast, combine bacon, pepper jelly, brown sugar, lemon juice, and garlic in a saucepan. Bring to a boil over medium heat, then reduce to a simmer and cook for 5 minutes, stirring occasionally. Remove from heat and let cool slightly.

FINISH: Transfer roasted Brussels sprouts to a large bowl, pour warm sauce over top, and toss to coat. Transfer to a serving plate and serve immediately.
